Smoky Black Bean Pumpkin Chili

This Chili is the perfect balance of smoky, sweet and spicy. If you like a more mild Chili, use regular diced tomatoes instead of fire roasted. The Slow Cooker method makes this a dish that is easy to include in your weekly dinner rotation.

Ingredients
  

  • 1 medium onion, diced
  • 1 medium red or orange bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (28oz) can diced tomatoes (fire roasted optional)
  • 2 (15oz) can black beans, drained & rinsed
  • 1/2 cup quinoa, uncooked White or Red Quinoa
  • 1 (15oz) can pumpkin puree (1 3/4 cups)
  • 1 cup shredded red cabbage
  • 3 cups vegetable broth Pacific Foods, Low Sodium works well here
  • 1 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 1/2 tsp smoked paprika
  • 1 tsp salt I use celtic sea salt or Pink Himalayan salt
  • 1 tsp black pepper

Method
 

  1. Add all ingredients into a slow cooker and stir until everything is well combined. Cover and cook 4 to 6 hours on high, or 6 to 8 hours on low.
  2. Add your desired toppings and enjoy!

Notes

Leftovers can be stored in the freezer and this chili reheats very well.

Everyday Mango Smoothie

Mango is the star of the show in this smoothie. This combination is a favorite in our house.

Ingredients
  

  • 1 medium red apple
  • 1 small carrot
  • 1 cup mango I use frozen mango
  • 1 tbsp chia seeds You can use ground flaxseed instead if you prefer
  • 1 tbsp raw almonds
  • 3 cups water

Method
 

  1. Place all ingredients into a high speed blender or a large Nutribullet cup, if you are using a Nutribullet. 
  2. Blend until Smooth.
  3. Drink & Enjoy!

Notes

If you do not have a high speed blender or a Nutribullet, you can still make this smoothie, the end result just won’t be as smooth. 

Pancakes

Best pancakes I ever made.

Ingredients
  

  • 1/2 cup All Purpose Flour
  • 1/2 cup Buckwheat Flour
  • 1/2 tsp Salt
  • 1 tbsp Baking Powder
  • 1 Egg
  • 3/4 cup Milk
  • 2 tbsp Olive Oil

Method
 

  1. Mix all ingredients.  Cook in pan on medium heat or on electric griddle at 300°.

Tropical Smoothie (Mango, Apple, & Banana, infused with Coconut)

This smoothie has a mildly sweet and tropical taste due to the coconut water.

  • 1 small banana
  • 1 medium red apple

  1. Combine all ingredients in a high speed blender or a Nutribullet. Blend until smooth.
  2. Drink and Enjoy!

Notes

Unless I am making a double batch of a smoothie, I always use my Nutribullet. For this recipe, I used the large Nutribullet cup.

Berry Blast

This smoothie is great to drink anytime, but especially when you are trying to boost your antioxidant intake. A banana is added for a balanced taste and a prebiotic bonus for your body.
